Happy New Year
I wanted to take a moment and wish everyone a Happy New Year.
This year we are having about a two dozen neighborhood families over for the evening. The kids will dance, watch movies and play in the basement while the adults have a few drinks and swap stories in the family room. This will be the third year we will hold a New Years Eve Party and it is one of my favorites because it gives us a chance to relax, visit with neighbors and not talk "soap". The best is that no one needs to drive because they all live in the neighborhood. Most people walk.
I will make my usual appetizers but there are three that are so incredibly easy and always gets rave reviews that I wanted to share them with you.
Aunt Teresa's Famous Cheese Ball
(2) 8 oz Cream Cheese
(1) Small Bunch of Green Onion - Chopped
(1) Jar of Dried Beef - Chopped
Directions: Chop all of green onion and dried beef. (I find it easiest to do the chopping with kitchen scissors.) Mix into cream cheese. Place into clear plastic wrap and form into a ball. Chill for 2 hours. Serve with Crackers.
Niki's Going...Going...Gone Meatballs
1.5 lb Lean Ground Beef
1 Egg
1 Cup Quaker Oatmeal
6.5 oz Evaporated Milk
1/2 teaspoon Garlic Powder
1 Tablespoon Chili Powder
1/2 Cup Chopped Onion
1 Cup Ketchup
1/4 teaspoon Minced Garlic
1 Cup Brown Sugar
1/2 Cup Chopped Sweet Onion
1 Tablespoon Liquid Smoke Flavoring
Directions: Preheat oven to 350º. Lightly grease 9 x 11 glass baking dish. In a bowl, mix the first 7 ingredients and form into 1" balls. Place them in the baking dish. In a separate bowl, mix remaining ingredients and pour over the meatballs. Bake uncovered for 1 hour at 350º. To serve, leave in baking dish and serve with toothpicks.
Debbie's Bacon Wrapped Water Chestnuts
1 lb. Thick Cut Bacon
(2) 8 oz. Cans of Water Chestnuts - Whole
1/3 Cup Packed Brown Sugar
1/3 Cup Mayonnaise
1/3 Cup Chili Sauce
Directions: Preheat oven to 350º. In a small mixing bowl, combine brown sugar, mayonnaise, and chili sauce. Set this sauce aside for later. Cut each strip of bacon in half. Wrap one strip around one water chestnut. Secure with a wooden toothpick. Place in a shallow glass baking dish. Bake at 350º for 30 minutes. Remove wraps from this baking dish and place them into a second decorative glass/ceramic baking dish. Pour sauce over wraps. Bake at 350º for an additional 30 minutes or until bacon is crispy. Serve hot out of the dish with toothpicks.
